Pesto Chicken Pasta

This is a favourite of mine, and my family’s. It’s a super simple dinner, that’s absolutely yummy.


Pasta – you’ll need enough for your family, and choose the pasta that makes you happiest (or that you have in the cupboard) – I used about 200g of linguine but it also works really well with penne pasta

300g chicken fillet

Pesto – you can make your own or use a pre-made pesto – I used a packet of Ina Paarman’s pesto

A little olive oil

A pinch of salt

Parmesan cheese, finely grated

How to

On the stove, bring a pot of salted water to the boil (enough water for your pasta). Once it’s boiling, add you pasta and a dash of olive olive oil and cook according to the packet instructions.

In a pan, heat a tablespoon of oil. Use quite a big pan, as you’ll be adding the pasta to this. Add your chicken fillets and grill until cooked through. Turn off the heat. Shred your chicken or chop into bite-sized pieces and return to the pan. Add your pesto to the pan and heat through with the chicken.

Once the pasta is cooked, drain in a colander. Add to the chicken and mix it all together.  Heat through if necessary. Serve in bowls topped with grated parmesan cheese.

See, it really is that simple.
